Double batch recipe (make approx 8 medium sized cookies)

4 (preferably ripe) bananas
2 cups old fashioned oatmeal
1 teaspoon cinnamon or pumpkin pie spice
Dash of salt
2 teaspoons vanilla extract (imitation works fine!)
2 teaspoons molasses (optional)
2x 1/3 of a cup (or 2/3 of a cup) Cranraisins or chocolate chips

 

Mash bananas and add oatmeal. Add dry seasonings then vanilla and molasses. Next fold in chocolate chips gently. Shape into cookies and leave in fridge to set for 15-25 minutes. This helps them hold better while baking.

Preheat oven to 350 degrees Celsius. Bake for 15-18 minutes. Let sit for 5 minutes to cool. Eat. Eat. Eat. Can store in fridge in air-tight container for up to a week. Good luck on them lasting that long.

Way healthier than flour, sugar, and butter cookies. Nice way to keep to clean eating!
